Teradomari, a port town facing the Sea of Japan, is often likened to the famous city of Kamakura on the Pacific side. This town embodies two historical facets: one of commerce, reflecting its success as a port of call for merchant ships that sailed between Osaka and northern Japan during the Edo period (1603–1868), and one of faith, with numerous Buddhist temples having offered refuge to travelers. The merchant ships that brought activity to the Minatomachi port district also handled the distribution of iron, the material used to forge the all-purpose makiri knives used by fishermen. Makiri knives were essential for everything from cutting fish to severing sturdy ropes while out at sea and thus had to be exceptionally sharp and durable. Craftsmen in the Tsubame-Sanjo area honed their skills by meeting the demands of these professionals, supporting Teradomari’s fishing culture through the creation of their tools.
At the same time, Teradomari served as a hub for faithful travelers crossing the sea to Sado Island. Based on the Buddhist spirit of salvation, free rest houses known as “fuseya” once welcomed travelers, forming the foundation for this town’s culture of charitable hospitality. Bustling commerce and warm hospitality toward travelers—the spirit of this unique port town comes from the fusion of these two elements, combined with a local seafood-based cuisine found only at a port town, welcoming all who visit.
The meals prepared for this tour are designed to immerse you in Teradomari’s fishing culture. Take in the irresistible aroma of hamayaki, seafood grilled right before your eyes in the sea breeze. Savor banya jiru, a soup fishermen once consumed to stay warm in their huts. Or enjoy a local sake pairing course prepared by the Japanese restaurant Uoyuki. All of these flavors can only be experienced at a port town and convey Teradomari’s history and the warmth of its people through all five senses.
Fish are nurtured in the bountiful sea off Teradomari. Fishermen use their skills to bring out their flavor, which chefs then elevate into a premium dining experience. Their techniques are made possible by knives crafted in Tsubame-Sanjo. The entire process of transforming fish into a delicacy is connected by a single thread. This community-focused journey invites participants to trace this unbroken connection for themselves, bringing together the local treasures scattered throughout the region to tell a single, cohesive story.
